8 cocoyams, 6 bunches of cocoyam leaves, 2 pounds of stock fish, 1.5 cups of palm oil, 2 cups of crayfish, 1 habanEru pepper, 1 medium onion (chopped), 1 teaspoon country onions, 2 tablespoons blended garlic and ginger, ¼ teaspoon black pepper, 3 seasoning cubes, 1 teaspoon salt, Piment (facultatif).

About Ekwang

Ekwang is a traditional Cameroonian dish, especially popular among the Bafaw people and some groups in Cross River, Nigeria. Made from grated cocoyams, wrapped in cocoyam leaves, and simmered with crayfish, palm oil, and spices, it’s flavorful but requires careful preparation. Though labor-intensive, it remains a beloved delicacy, with variations including smoked fish, beef, or dried crayfish, adding to its rich taste and cultural significance.

  1. Prepare the cocoyams: Peel and grate them into a paste. Mix with a little salt.

  2. Wrap the mixture : Take a teaspoon of the paste, place it at one end of a leaf, and roll it up tightly.

  3. Layer in a pot : Coat a large pot with palm oil and arrange the wrapped cocoyam pieces in criss-cross patterns.

  4. Add ingredients : Pour in the stock fish, crayfish, chopped onions, garlic, ginger, black pepper, seasoning cubes, and habanEru pepper.

  5. Cook : Add 2-4 cups of water (or stock) and bring to a boil. Let it simmer for about 30 minutes, shaking the pot occasionally to mix the flavors.

  6. Serve : Once cooked, adjust seasoning if needed and enjoy warm.
