Senegalese Rice Ingredients:

  • 1.5 kg fragrant rice or broken rice
  • 3 fresh mackerel fish, chicken, smoked fish
  • Ground crayfish
  • 10 tomatoes
  • Large carrots
  • A few peeled and coarsely chopped potatoes
  • Shrimps
  • 4 bay leaves
  • 1 large onion
  • 1 clove of garlic
  • 4 okras
  • Chili (4)
  • A small head of cabbage cut into large pieces
  • A large aubergine
  • Oil
  • Salt and stock cube
  • One sachet of Lamémé fish organic spice

About Senegalese Rice (Thieboudienne)

The dish "Senegalese rice" or thiéboudienne, is the national dish of Senegal, a savoury mixture of fragrant rice, fresh fish, and various vegetables like carrots, cabbage, aubergines, and tomatoes, enhanced by broken rice, dried fish, molluscs, and spices, giving it an authentic flavour. Much more than a simple meal, it is a cultural symbol, inscribed on UNESCO's intangible heritage list, and holds an essential place in Senegalese tradition, to the point that it is unthinkable for many not to eat it for lunch!

Senegalese Rice recipe

  1. Clean the fish and cut it. Add a mixture of chili, salt, stock cube, and Lamémé fish spice, then let it rest for about ten minutes before frying them.
  2. Heat oil in a pan, adding the minced onion and garlic, the previously crushed tomatoes, the Lamémé fish organic spice, then let it fry for about fifteen minutes before adding the fish.
  3. Add a ladle of water, salt, stock cube, and bay leaves to this tomato sauce and let the fish soften.
  4. After good cooking, remove the fish and add all the vegetables and shrimp and let everything cook.
  5. Then, as soon as the vegetables are cooked, remove them, then add the okra and let it cook for 5 minutes before removing them in turn to add the previously washed rice.
  6. It is cooked over very low heat, stirring occasionally for perfect cooking.
  7. Finally, when the rice is cooked, place the vegetables and fish on top and serve your Thieboudienne piping hot.
